Breakfast and brunch are my most favourite meals of the day. Whenever I am in a new city, I make it my mission to find the best breakfast restaurants around (find my London Breakfast Guide here). I am always on the hunt for new recipes, that I can make from scratch at home and that are quick, simple and tasty – bonus points if they are healthy as well. Luckily, I stumbled upon a breakfast spread in London, that I had to recreate at home.

The avocado is probably the most talked-about fruit of the moment. There are thousands of recipes on how to use it for breakfast as well as lunch, dinner and a snack. I am also a big lover of the fruit and always have one avocado (or more) at home. Today I’ll be showing you how I make my very own breakfast avocado spread, that is not only perfect for a savoury start into your day but also a very tasty afternoon snack. (You could also call it “Breakfast Guacamole” but that probably wouldn’t be authentic.)

Ingredients
1 Avocado
1 Tomato
1 Lime (the juice)
1 teaspoon coriander/cilantro
1/2 teaspoon chili flakes
salt to taste

How To

  • Remove the avocado’s skin and chop the flesh roughly. Dice the tomato and put it in a bowl with the avocado.
  • Add the juice of one lime, the coriander and the chili flakes.
  • In a food processor, mix everything on medium speed for around 5-10 seconds until everything is creamy but not too smooth. Be careful, as the mixture turns into a thick liquid easily. You can also leave your avocado junkier, depending on how you like it.
  • If you do not own a food processor, grab a fork and mash the avocado until smooth. The juice of the tomato should help with that.
  • Season with salt to your liking and stir.
  • Serve in a bowl with chili flakes sprinkled on top.

I love having this spread on toasted bagels or homemade bread. It also tastes great with nacho chips or as a dip for vegetables (carrots, cucumbers or peppers).

Frühstück und Brunch sind meine liebsten Mahlzeiten des Tages. Immer wenn ich in eine Stadt komme, in der ich noch nie davor war, mache ich mich sofort daran, die besten Frühstückslokale zu finden (zB hier mein London Frühstücksguide). Ich bin immer auf der Suche nach neuen Rezepten, die ich zu Hause nachmachen kann und die schnell und einfach sind sowie gut schmecken – Bonuspunkte gibt es, wenn das Rezept zusätzlich noch gesund ist. Bei meinem letzten Aufenthalt in London stolperte ich über einen Frühstücksaufstrich, den ich zu Hause sofort nachgemacht habe.

Die Avocado ist im Moment wahrscheinlich die beliebteste Frucht überhaupt. Es gibt tausende Rezepte online, wie man Avocados verarbeiten kann und für Frühstück, Mittag- und Abendessen verwendet. Ich bin auch ein großer Fan der Frucht und habe immer eine (oder mehrere) daheim. Heute zeige ich euch, wie ich meine eigenen Avocadoaufstrich mache, der nicht nur gut zum Frühstück schmeckt, sondern auch als Snack gut geeignet ist. (Man könnte die Creme auch “Frühstücksguacamole” nennen, aber das wäre wohl nicht so authentisch.)

Zutaten
1 Avocado
1 Tomate
1 Limette (den Saft davon)
1 Teelöffel Koriander
1/2 Teelöffel Chiliflocken
Salz nach Belieben

Zubereitung

  • Die Avocado aufschneiden und das Fruchtfleisch herauslöffeln. Die Tomate in Würfel schneiden und mit der Avocado in eine Schüssel geben.
  • Den Saft der ganzen Limette, den Koriander und die Chiliflocken zugeben.
  • Alle Zutaten in einer Küchenmaschine auf mittlerer Stufe für ca. 5-10 Sekunden mixen, bis alles cremig, aber nicht zu flüssig ist. Achtung, nicht zu lange mixen, weil die Mischung schnell zu einer dickflüssigen Masse wird. Wer es nicht so cremig mag, mixt einfach kürzer.
  • Wenn ihr keine Küchenmaschine zu Hause habt, könnt ihr entweder einen Stabmixer verwenden, oder mit einer Gabel die Avocado zerdrücken. Der Saft der Tomate sollte dabei helfen.
  • Nach Belieben salzen und kurz umrühren.
  • In einer Schüssel servieren und Chiliflocken darüber geben.

Ich esse den Aufstrich am liebsten auf getoasteten Bagels oder auf selbstgemachtem Brot. Er schmeckt aber auch super mit Nacho Chips oder als Dip für Gemüsesticks (Karotten, Gurke oder Paprika).
