Banana Bread Recipe | Bake with Me

Banana Bread is one of those things that stuck with me after living in the US for a while.  I am always reminded of the great times I had there when I eat a slice (or more…). Although I like to eat healthy most of the time (see here), I do like to indulge in some sweets from time to time. Banana Bread is a great little treat for when you are feeling peckish or just want a mid-day snack (and trust me I always have to be careful not to eat the whole thing at once!). I usually bake this when I know I’ll be out all day or have people over. The recipe I will be sharing with you today is simple, fast and oh so delicious! I hope you enjoy!

Ingredients

2 1/3 cups mashed overripe bananas (I usually use four)
2 cups flour of your choice
3/4 cup sugar of your choice (I usually use coconut or brown sugar)
1/2 cup butter
2 eggs
1 table spoon vanilla sugar or vanilla extract
1 teaspoon baking powder
1/4 teaspoon salt

optional: nuts (hazelnuts, almonds or walnuts) and chocolate chips

Instructions

  • Preheat the oven to 175°C (350°F) and lighty grease a loaf pan.
  • In a large bowl, combine flower, baking soda, vanilla sugar and salt. In a seperate bowl, cream together butter, sugar and eggs. Stir in the bananas until well blended.
  • Mix the banana mixture with the flour mixture and stir to moisten. Optional: Mix in nuts or chocolate chips.
  • Pour batter into the prepared loaf pan. Bake the mixture in the preheated oven for 45-50 minutes, until a toothpick inserted into center of the loaf comes out clean.
  • Let it cool for a couple of minutes and enjoy!

You could serve the Banana Bread with ice cream or whipped cream. I also love having mine with a cup of chai tea but it is also wonderful with coffee, hot chocolate or as a cheeky little breakfast treat.

Banana Bread ist eines dieser Dinge, die ich aus meiner Zeit in den USA mitgenommen habe. Bis heute erinnere ich mich an die schönen Momente in New York, wenn ich ein Stück (oder mehrere…) davon esse. Obwohl ich mich gerne gesund ernähre (hier), liebe ich süße Versuchungen von Zeit zu Zeit 🙂 Banana Bread ist ein super Snack für zwischendurch oder auch fürs Frühstück (und ich muss mich immer zusammenreißen, nicht den ganzen Laib auf einmal aufzuessen!). Heute teile ich ein Rezept mit euch, dass nicht nur super gut schmeckt, sondern auch schnell und einfach zu machen ist. Ich hoffe, euch gefällt’s!

Zutaten

2 1/3 cups zerdrückte überreife Bananen (ich verwende meistens vier)
2 cups Mehl eurer Wahl
3/4 cup Zucker eurer Wahl (ich verwene meistens braunen oder Kokosnuszucker
1/2 cup Butter
2 Eier
1 table spoon Vanillezucker oder Vanilleextrakt
1 teaspoon Backpulver
1/4 teaspoon Salz

optional: Nüsse (Haselnüsse, Mandeln oder Wahlnüsse) oder gehackte Schokolade (chocolate chips)

Zubereitung

  • Den Ofen auf 175°C vorheizen und eine Kastenform/Brotform mit einölen.
  • Mehl, Zucker, Backpulver, Vanillezucker und Salt in einer großen Schüssel mixen. In einer zweiten Schüssel Butter, Eier und Zucker cremig schlagen. Danach die Bananen zugeben, bis alles gut vermischt ist.
  • Anschließend die Bananenmixtur mit der Mehlmixtur vermengen. Optional: Nüsse oder Schokoladenstücke zugeben.
  • Den Teig in die vorbereitete Form geben und für 45-50 Minuten backen. Um zu sehen, ob der Kuchen durch ist, einfach einen Zahnstocher in die Mitte stechen. Wenn er sauber wieder rauskommt, ist es fertig.
  • Kurz abkühlen lassen und genießen!

Ihr könnt das fertige Banana Bread mit Eiscreme oder Schlagsahne als Dessert servieren oder zum Frühstück mit Butter. Ich esse meines auch gerne mit Kaffee, Chai oder heißer Schokolade.
