When it comes to summer food, I am all about light dishes that are refreshing and good for the body. I am also a big fan of quick and simple cooking (but who isn’t?) – and what’s better than to enjoy a quick meal and get lots of nutrients than with a cold salad? Today I am showing you how to make a delicious watermelon salad with feta cheese, topped off with walnuts. I love using ingredients you wouldn’t normally consider for a salad. This is an easy recipe for BBQs, an afternoon spent on the balcony or picnics.

Ingredients

1/4 watermelon, diced (approx. 1 kilo/2lbs)
200 grams feta cheese
150 grams walnuts
3 tbsp olive oil
1 tbsp balsamic vinegar
3-5 mint leaves
serves two main or four sides

Instructions

  1. Dice the watermelon into bite-size bits and place them in a big salad bowl.
  2. Repeat with the feta cheese. Make sure you use a sharp knife, so the cheese doesn’t crumble.
  3. Add in the walnuts and mix everything carefully.
  4. For the dressing, just add three tablespoons of olive oil and one tablespoon of balsamic vinegar. The vinegar will add a sweet-and-sour undertone. If you don’t like that, you can also just leave the vinegar out.
  5. Serve on a plate and top off with some mint leaves for some extra freshness.

This summer salad is easily made within 10 minutes – if you don’t eat half of the ingredients while cutting them 😉 You could also substitute the walnuts with almonds or hazelnuts for a less intense flavour. As I mentioned above, I love serving this salad for BBQs or having on a hot summer’s day at a picnic or on my balcony. It is perfect for when you need a quick meal that isn’t too filling but keeps you going for a while.

Zur Sommerzeit esse ich am liebsten leichte Gerichte, die sich gut mit der Hitze vertragen und gesund sind. Ich koche zwar sehr gerne, trotzdem soll es in der Küche schnell gehen und einfach sein (aber wer mag das nicht?). Aus diesem Grund bin ich ein großer Fan von Salaten, weil sie nicht nur viele Nährstoffe bieten, sondern auch fix zuzubereiten sind. Heute zeige ich euch mein Rezept für einen Wassermelonen Feta Salat mit Walnüssen. Ich experimentiere wahnsinnig gerne mit Zutaten, die man sonst eher selten in Salaten findet. Das Rezept ist total einfach und super als Beilage beim Grillen, für Nachmittage am Balkon oder für ein Picknick.

Zutaten

1/4 Wassermelone, gewürfelt (circa ein Kilo)
200 Gram Feta
150 Gramm Walnüsse
3 EL Olivenöl
1 EL Balsamico
3-5 Minzblätter
für zwei Portionen als Hauptmahlzeit oder vier Beilagen

Zubereitung

  1. Die Wassermelone in Würfel schneiden und in eine große Salatschüssel geben.
  2. Den Feta ebenfalls würfeln und in den Behälter geben. Hierfür ein scharfes Messer verwenden, damit der Käse nicht bröckelt.
  3. Die Walnüsse zugeben und alles vorsichtig mischen.
  4. Für das Dressing drei Esslöffel Olivenöl mit einem Esslöffel Balsamico über den Salat gießen. Der Balsamico gibt dem Gericht einen süßsauren Beigeschmack und kann auch weggelassen werden, wenn das nicht erwünscht ist.
  5. Den Salat auf einem großen Teller servieren und für einen extra Frischekick ein paar Minzblätter darüber geben.

Der Salat ist in 10 Minuten fertig – solange man nicht wie ich dazwischen die halbe Wassermelone aufisst 😉 Die Walnüsse können für eine sanftere Geschmacksnote auch durch Mandeln oder Haselnüsse ersetzt werden. Ich nehme diesen Salat immer zu Grillpartys oder Picknicks mit oder esse ihn am Balkon mit einem Glas Weißwein. Ich hoffe, ihr probiert das Rezept mal aus!

    Ist ja lustig, ich habe vor ein paar Tagen erst einen Bericht im Radio gehört, da ging es auch um einen Wassermelonen-Salat mit Feta. Ich konnte mir das geschmacklich gar nicht vorstellen, und hab es deswegen selbst ausprobiert. Schmeckt super lecker – hätte ich nicht gedacht!     Von dieser Kombination habe ich auch schon öfter gehört und will es unbedingt mal ausprobieren! Ich bin ja normalerweise nicht so der Fan von Früchten im Salat, außer natürlich es ist ein Obstsalat 😉 Was für mich aber immer geht, sind Ananas oder Äpfel im Schichtsalat und Mandarinen im Reissalat. Lecker!

    I’m going to have go try this out. My mom has a nut allergy so I’ll swap the walnuts for pecans, but this should turn out well. Often I put berries in my salad so this it’ll be a nice change.

    So und was mache ich jetzt? Habe so einen Gusto bekommen und habe keine Melone zu Hause. Die Bilder und der Salat sehen echt so lecker aus. Das Rezept werde ich definitiv ausprobieren. Ich mag als Öl auch sehr gerne geröstetes Sesam-Öl zu Salaten, wo ich mal Birnen reinschneide. Sind aber eher Herbstsalat. Danke für die Inspiration.
